Vegan Gluten-Free Chocolate Chip Cookies

Now, it’s time to bake some delicious vegan, gluten-free chocolate chip cookies. The recipe we are sharing with you is going to be fairly simple. Feel free to make any necessary substitutions based on your diet or health needs. We have tried to make it as flexible as possible. From start to finish, you will be eating some mouth-watering cookies in just 22 minutes. So, grab your apron, put on your favorite music, and get ready to bake.

Ingredients:

  • 1/3 cup solidified coconut oil*
  • 1/4 cup sugar
  • 1/4 cup brown sugar or coconut sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons almond milk
  • 1 cup almond flour (not almond meal)
  • 1 cup gluten-free oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • * You do not want the coconut oil to be a solid or a liquid. You want it softened to the point it is scoopable. If your coconut oil is too solid, microwave it with the lid off for about 10 seconds. If your coconut oil is too liquidy, then refrigerate it until it is mildly firm. Vegan butter can be used as a replacement or can be used in combination with the coconut oil if you prefer.

Instructions:

Step 1: Preheat the oven to 350°F (180°C).
Step 2: Combine the coconut oil and sugars. Mix them on high for 1 minute.
Step 3: Next, add the vanilla extract and almond milk to the mixture. Continue mixing for an additional 30 seconds.
Step 4: Add the almond flour to the mixture as you continue to mix.
Step 5: Add the gluten-free oat flour, baking soda, baking powder, and salt. Mix for around 20 seconds, or as long as necessary for the dough to form.
Step 6: If you have any issues with the dough appearing dry or crumbly, you can either mix it for longer or add another tablespoon of almond milk.
Step 7: Stir in the chocolate chips.
Step 8: Take about 1 and 1/2 tablespoons of dough to make a scoop for each cookie. Arrange those scoops on a baking sheet. Allow about 2 inches of space between each scoop.
Step 9: Bake for about 12-13 minutes in the oven, or until the edges are a light golden brown.
Step 10: Allow these delicious, vegan, gluten-free chocolate chip cookies to cool for at least 15 minutes before serving. The cookies will continue to firm as they cool.
