Vegan Chocolate Bars

Chocolate, in its raw form, is an excellent superfood. Cacao (raw chocolate) is potent in protein and antioxidants. Most traditional chocolates from the supermarkets are so highly processed and loaded with sugar that the benefits of cacao are reduced. So, why don’t you make your own vegan chocolate? It’s not that hard; we’ll show you.

Prep Time:

1 hour 15 minutes

Cooking Time:

5 minutes

Ingredients:

  • 2 Tbsp coconut oil
  • 1 1/4 cup chopped cocoa butter
  • 1 cup cacao or unsweetened cocoa powder
  • 2 Tbsp maple syrup
  • 3 Tbsp cacao nibs
  • 1/2 tsp vanilla extract (optional)

Instructions:

1. Pour 2 inches of water to a medium pan and transfer to a rolling simmer over medium-high heat. Then reduce heat to low-medium, and set a ceramic mixing bowl on top of the container, making sure it's not touching the water. This forms a Double Boiler.
2. Add chopped cocoa butter and coconut oil to the mixing bowl, and let them melt while occasionally stirring with a whisk for about 3 to 4 minutes.
3. Once melted, remove the bowl from the heat. Add the cacao or cocoa powder to a fine mesh strainer, and sift it over the melted cocoa butter. Use your whisk to stir until thoroughly combined.
4. Add maple syrup and stir once more. At this time, you can also add the (optional) salt and vanilla.
5. Add more vanilla to magnify the chocolate flavor and add depth. Add salt if a bit of saltiness is required, or more cacao/cocoa powder for an intense chocolate flavor.
6. Pour your chocolate into the molds of choice. Sprinkle on the cacao nibs.
7. Delicately transfer to the freezer (make sure the platform is stable). Leave it there for about an hour. Remove from molds once the chocolate is solid enough.
8. Store it in the refrigerator or the freezer if you plan on eating it over a more extended period. Let it come to room temperature before eating, as it will be softer and creamier.
